Whole black gram is a small round legume which resembles green gram in shape. It is a fiber rich bean and has amazing health benefits when consumed like its ability to boost energy, reduce pain and inflammation, improve immunity, protect cardiovascular health, helps in maintaining skin health, helps in preventing/controlling diabetes, it builds strong bones, helps increase digestion and strengthen the nervous system and so on.

Fiber rich food is always/commonly recommended for people with diabetes. Rather fiber is very helpful  for those who are at high risk of developing disorder ie… prevents those dangerous spikes and drops in blood sugar by balancing the levels of insulin and glucose in the blood. And also fiber rich food is always filling.

We normally make dosay/dosa using split black gram and rice, and I have also tried making finger millet/ragi set dosay/dosa , but this time somehow it did strike my mind to try the same recipe just by replacing white urad with black urad dal. So tried making the same and it is a hit. No compromise in anything except for the color. So now we can replace rice with red rice or types of millets etc.

Ingredients : measuring cup used – 250 ml

  • Rice (sona masoori) – 2 cups
  • Whole black gram/sabut urad/uddina kalu – 1 cup
  • Sago (sabbakki) – 1/2 cup
  • Red rice flakes/poha/kempu avalakki – 1/4 cup
  • Salt to taste
  • Oil/ghee to smear (I always use very little oil to smear)

PROCEDURE :

  • Rinse soak all the ingredients except salt for 6 to 7  hrs.
  • Drain all the water and grind into a smooth batter using required amount of water (keep it little thick)
  • Transfer, cover and allow it to ferment for 8 hrs or overnight
  • While making this dosay/dosa , don’t spread the batter with ladle, rather just pour one big ladle full of batter on the hot tawa and shake the tawa lightly
  • Smear oil/ghee on it and cook on both the sides
