GORIKAYI ANNA/CLUSTER BEANS RICE

A yummy, tasty, flavorful spicy rice preparation using cluster beans/gorikayi/gwarphali. The same masala powder, which we use while making vangibath (brinjal rice) is used to make this spicy rice. Cluster beans is full of proteins and soluble fibre along with important vitamins like …Vitamin K, vitamin C & vitamin A. It contains minerals, it has abundant carbohydrates and foliates. It is absolutely fat & cholesterol free. Cluster beans/gorikayi is a most suitable vegetable for diabetics. It contains low glycemic index. The below mentioned quantity of ingredients serves 4 people.

Ingredients :
For making palyada pudi/masala powder :
- Coriander seeds – 2 tbsp
- Split bengal gram/chana dal – 1&1/2 tbsp
- Split black gram/urad dal – 1 tbsp
- Grated dry coconut – 1/4 cup
- Black pepper corns – 1/4 tsp
- Red chilli – 6 nos., for colour & 2 to 4 nos., for spiciness
- Curry leaves – few
- Cinnamon – 3/4 ” piece
- Cloves – 4 nos.,
- Green cardamom – 1 small
- Asafoetida – 1/4 tsp
- Turmeric Powder – 1/4 tsp
Dry roast all the above ingredients without burning on a low medium heat, allow it to cool completely and then grind into a fine powder
For preparing cluster beans rice :
- Cooked rice – 5 cups
- Cooked cluster beans/gorikayi – 2 cups
- Oil – 4 tsp
- Mustard seeds – 1/2 tsp
- Cumin – 1/2 tsp
- Curry leaves – 1 or 2 strings
- Turmeric powder – 1/2 tsp
- Palyada pudi/masala powder – 6 to 7 tbsp
- Red chilli powder – 1/4 tsp
- Tamarind juice – 4 tbsp
- Jaggery – 1 tbsp
- Salt to taste
PROCEDURE :
- Heat oil in a pan, add in mustard seeds, cumin seeds and curry leaves and allow it to splutter
- Now add in steamed/cooked cluster beans/gorikayi and saute well continuously for a minute on high flame
- Reduce the flame, Put the prepared masala powder, turmeric powder, red chilli powder, tamarind juice, jaggery and required salt, mix everything really well
- Now add in cooked rice and required salt, mix well with the vegetable mixture
- Serve with any kind of raita or as such (I prefer eating it as such)
