RAW PAPAYA/PARANGIKAAYI PALYA/SUBJI

Raw papaya contains amazing nutritional benefits. Raw papaya is packed with vitamins, enzymes and phytonutrients and is also a rich source of magnesium, potassium, vitamins A, C, E and B. Papaya in its raw form contains a lot more active enzymes than the ripe version of the fruit. The most potent enzymes it contains is papain and chymopapain. These enzymes in the raw papaya help in the breakdown of fat, proteins and carbohydrates from the food we consume. Almost throughout the year, raw papaya is available in the market here in Gurgaon. The recipe which I’m going to post today is a very simple and tasty side dish which goes well with almost everything ie… saaru anna (rasam rice), chapati, poori, roti, rotti etc.

 

Ingredients :

  • Raw/green papaya – 1 small (which yields an almost 1&1/2 cup when grated in a grater with big holes)
  • Grated fresh coconut – 1/2 cup (adjust)
  • water – sufficient to cook
  • Salt to taste

Others :

  • Oil – 1/2 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/4 tsp
  • Split Bengal gram/Kadlebele – 1 tbsp
  • Split black gram/uddina bele – 1/2 tbsp
  • Curry leaves – few
  • Coriander leaves – 2 tbsp
  • Ginger, grated – 1 tsp
  • Turmeric powder – 1/4 tsp

 

PROCEDURE :

  • Rinse well, peel the skin, remove the seeds if any and grate the raw papaya
  • Heat oil in a pan and add in all the ingredients listed below the heading “others” an saute for a minute

  • Now add in grated papaya, mix everything well and add sufficient water, cover with a lid and allow it to get cooked on medium flame

  

  • Once cooked, add in salt and coconut combine well

 

  • Raw papaya Palya/subji is ready to be served
