ನಿಂಬೆ ಹಣ್ಣಿನ ಚಿತ್ರಾನ್ನ |

Very much suitable Lunch box idea ie…….. one of the oldest, authentic, simple, flavorful, colorful, healthy one pot meal, which is an all time favorite among many people is Lemon rice.

This tastes heavenly when we add the correct proportion of spiciness + sourness + salt into it !! This is a very easy and quick to make rice preparation using readily/easily available ingredients at home.

The below mentioned quantity of ingredients is sufficient to serve 3 people and you can always pair lemon rice along with some deserts/sweets

Ingredients : measuring cup used – 250 ml

  • Cooked rice – 4 cups
  • Lemon juice – 3 tbsp
  • Salt to taste

For tempering :

  • Oil – 2 tbsp
  • Mustard seeds – 1/2 tsp
  • Split Bengal gram/Kadalebele – 1 tbsp
  • Split black gram/uddina bele – 1/2 tbsp
  • Groundnut – 1/3 cup
  • Green chilli paste – 1 tsp (adjust)
  • Curry leaves – 2 strings
  • Coriander leaves – 2 tbsp
  • Chopped capsicum – 1 cup (optional)
  • Turmeric powder – 1/2 tsp

Others : (Below ingredients are optional, but if used, it enhances the taste of the dish)

  • Almonds/Cashew nuts – 8 to 10
  • Pomegranate seeds – 2 tbsp
  • Grated fresh coconut – 1/2 cup

PROCEDURE :

  • Heat oil in a pan, add in mustard seeds, split bengal gram, split black gram, ground nut and saute till they become roasted
  • Now add in green chilli paste, curry leaves, coriander leaves, capsicum and saute till capsicum turns soft (keep it crunchy)
  • Now add in turmeric powder, salt and combine everything well
  • Turn off the heat (do not forget, otherwise lemon juice turns out bitter) and add in lemon juice followed by cooked rice and combine everything well gently
  • Add in pomegranate seeds and coconut (if using), check for the salt
