Quick, simple, easy one pot meal idea, prepared with very few basic ingredients which are easily available at home. I have prepared this aloo pulao or Potato pulao using regular sona masoori rice, but it can be replaced by any kind of rice of your choice.

My mom used to put Palyada pudi /home made subji masala so even I have put the same masala powder, but mom never used to put onion in this recipe. Somehow I wanted to check how it would taste, so have added onion, but did not add capsicum.

Also I have put many more extra ingredients like dry/fresh fenugreek leaves, sesame seeds, fenugreek seeds, ginger and red chili powder which is mildly hot and have put much less oil – it’s done using only 2 tsp oil !!

Below is the video recipe of this dish, in which I have not used onion but have put capsicum and also raw/fresh turmeric, which in turn gave the dish an excellent bright color.

Ingredients : measuring cup used – 250 ml – Serves – 4

  • Rice – 1 cup
  • Water – 2 cups
  • Oil – 2 tsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • White/black sesame seeds – 1 tbsp
  • Fenugreek seeds – 1 tsp
  • Kasuri methi – 2 tbsp or fresh methi- a fist full
  • Green chilli – 1 tbsp finely chopped
  • Grated ginger – 1 tbsp
  • Curry leaves – 2 strings

Vegetables :

  • Onion – 3/4 cup (diced)
  • Capsicum – 1 big (today I have not put)
  • Tomato – 1 big (diced)
  • Fresh green peas – 1/2 cup
  • Aloo/Potato – 2 medium sized, cut into long (I do not peel skin)
  • Lemon juice/grated mango/tamarind juice/grated amla – 2 tbsp

Condiments :

  • Turmeric powder – 3/4 tsp
  • Red chilli powder (mildly spicy) – 3/4 tsp
  • Palyada pudi – 2 tsp
  • Salt – 1 tbsp (adjust)

PROCEDURE :

  • Heat oil, put mustard seeds, cumin seeds, sesame seeds, methi seeds, green chili, ginger and curry leaves and let them splutter
  • Now add in onion (capsicum) and saute till translucent
  • Reduce the heat and add in tomato, Potato, green peas and kasuri methi and saute for a minute
  • Now add in turmeric powder, red chili powder, Palyada pudi , salt and lemon juice and mix well
  • Now add in rinsed rice and boiled water stir well, close the lid when it starts boiling and cook till 1 whistle, transfer to another container when cooled
  • Serve as such or with any kind of raita
