Just like that, it did strike my mind and I immediately converted my idea into a dish !!
Actually now further I’m thinking of making this golden halwa using vermicelli/semiya/shavige, sago/sabudana/sabbakki as well
Yes … kind of different, yummy, quick, simple and healthy sajjige/sooji ka halwa/semolina pudding/halwa by adding grated raw turmeric. A sweet golden beauty !
I straight away made the video, so no step wise procedure pics, shall post them sometime later I guess.
Ingredients : measuring cup used – 250 ml, serves 3 to 4
- Pre roasted semolina/rave/sooji – 1/4 cup
- Water – 3/4 cup
- Warm milk – 1/4 cup
- Grated raw turmeric – 1 tsp (tightly packed)
- Jaggery – 1/4 cup (adjust) You can also use sugar of any kind
- Ghee – 3/4 tbsp
- Cashew nuts – 1 tbsp
- Raisins – 1 tbsp
- Roasted melon seeds – 1 tsp
- Cardamom powder – 1/8 tsp
PROCEDURE :
- To begin with soak the haldi in warm milk
- Heat ghee in a pan, add in cashew & raisins, roast them, then add in roasted semolina and stir for a while, then add in water, stir, reduce the heat to low, cover and let it cook
- Now add in dissolved & strained jaggery syrup, stir until the mixture turns thick
- Now add in soaked raw turmeric along with milk and stir until the mixture turns thick again and leaves the edges of the pan
- Turn off the heat, transfer the sajjige/halwa into a serving dish, sprinkle melon seeds and serve
