Puran Poli or Holige as we call this in Kannada is a pleasing sweet dish. Though I have made this delicious sweet numerous number of times and every time thought of taking the pics and shooting the video but couldn’t/didn’t do so !! But I’m glad that … finally it happened !! lol

And here you can check the recipe of this festival special, healthy sweet dish which is made by using those regular, easily available at home stuffs. Only thing you need to check necessarily before making this dish is the Pumpkin. If you have that also at home, then making this dish is a child’s play. This recipe is being adopted from Shravani’s Kitchen, but moderated as per my interest
However this dish can also be considered as Pumpkin sweet Paratha and can be made on any day any time. I’m also thinking of coming up with the spicy version of this holige/Paratha

Ingredients : measuring cup used – 250 ml
For the outer layer :
- Whole wheat flour – 1&1/2 cups + for dusting
- Salt – 1/2 tsp
- Hot ghee – 2 tbsp
- Water – 1/2 cup + 1 or 2 tbsp
For the stuffing :
- Grated Pumpkin – 2 cups
- Jaggery – 1 cup
- Ghee – 1 tbsp
- Sesame seeds – 1 tbsp
- Poppy seeds – 1 tbsp
- Cardamom powder – 1/2 tsp
PROCEDURE :
- Gather together wheat flour, salt and ghee in a parath/basin, combine well while rubbing with your palm until when you press it with your form it should hold a form
- Then knead into a soft dough by gradually adding water, cover and set aside
- Heat a pan/karahi, heat ghee, add sesame seeds and poppy seeds, when they splutter, add in grated pumpkin and saute continuously on medium high heat for 2 minutes
- Then add in the jaggery, keep stirring. The mixture turns liquid and gradually all the water evaporates. So keep stirring until the mixture turns completely dry.
- Remember there should not be any moisture in the mixture, else it becomes difficult to make/roll the holige/puran poli
- Meanwhile add the cardamom powder, once the mixture is dry, remove from the heat and let it cool, then divide into equal portions
- Now remove the cover and knead the dough well again and divide into equal portions. You can make as big or as small holige as you want, so make portions accordingly
- Take a portion of the dough and place a portion of the stuffing, cover properly from all over, roll into a circular disc by dusting with the flour
- Roast on both the sides on a heated tawa by smearing little oil
- Serve with Ghee and also with milk (optional)
