GHUGNI/GHUGNI CHAT/ಕೋಲ್ಕತ್ತಾದ ಘುಗ್ನಿ/ಘುಗ್ನಿ ಚಾಟ್

We all at home are the big fans of this Kolkata special street food – ghugni chat. Ghugni chat is basically a gravy made using dried white peas along with some easily available at home herbs & spices.
May be why we like this chat so much is because of a kind of resemblance to a special chat, which is again made using dried green peas called masaal Puri/masala Puri available in Namma Bengaluru
Long ago I learnt about this recipe from our Bengali maid Shilpi. Since then I make this chat somewhat regularly during winters. I have made many moderations to suit our taste and which I felt makes this chat still more yummy and I must say this chat tastes the yummiest.
Ingredients : measuring cup used – 250 ml
- Dry White Peas – 1 cup (becomes almost 3 cups after soaking)
- Water – 4 cups
- Potato (cut into cubes) – 1 heaped cup
- Turmeric powder – 1/2
- Salt – 1 tsp
Others :
- Oil – 1 tbsp
- Cumin seeds – 1 tsp
- Green chili – 1 tsp
- Curry leaves – 2 sprigs
- Ginger – 1 tsp
- Onion, chopped – 1 cup
- Tomato, chopped – 1 cup
- Coriander leaves – 2 tbsp
- Salt – 3/4 tsp
Spices :
- Carom seeds/ajwain – 1/2 tsp
- Cumin seeds powder – 1&1/2 tsp
- Coriander powder – 2 tsp
- Red chili powder (less hot) – 1 tsp
- Pomegranate Powder – 1 tsp (optional)
- Tamarind juice (thick) – 1 tbsp
- Jaggery – 1 tbsp
- Salt – 1 tsp
To sprinkle on the top :
- Onion Juliennes
- Chopped tomato
- Pomegranate seeds
- Coriander leaves
PROCEDURE :
- Soak the white peas in enough water for 10 to 12 hours, drain all the water, pressure cook until soft along with Potato cubes , turmeric powder and salt in 3 cups of water (2 whistles are enough in my cooker but you can do accordingly)
- On the other hand, heat oil, put cumin seeds, green chili, curry leaves , ginger, stir once, now add in onion, coriander leaves, tomato and salt, stir everything until soft. Then put carom seeds, cumin seeds powder, red chili powder, Pomegranate powder (if using) and saute while combining everything well
- Take out 1/2 cup of cooked Peas – Potato mixture and put into a mixie jar, also add 1/4 cup sauteed onion tomato mixture , grind together into a fine paste by adding water (use the remaining 1 cup of water)
- Now transfer the cooked peas-Potato mixture into the pan consisting of sauteed onion tomato mixture, also put the ground paste, salt, jaggery and tamarind juice, mix and cook everything further until it boils rapidly
How to Plate the ghugni chat :
- Pour some 2 to 3 ladle full of prepared Peas gravy in a plate and sprinkle Onion Juliennes, Chopped tomato, Pomegranate seeds and Coriander leaves one by one on the top and serve hot
- Serve the Ghugni chat in a plate or in a Leaf bowl etc
