Basundi or Rabdi is a popular milk based dessert made across India. And today I’m here to introduce to you all one of the super yummy basundi prepared using one of the vegetable, which is available in plenty during winter, that is Fresh Peas.

Yes today I’m going to let you all know how to make basundi using fresh Peas. Very long back I had seen this recipe on TV in one of the cookery show. I used to watch lot of cookery shows in my young age. I have noted down all the recipes and have tried so many of those as well and still continue to do so.

So this is one such recipe. I clearly remember till today, that I prepared this dessert immediately after watching the episode and both my In law’s and my mother liked it so much. NOTE : To blanch the almonds, soak almonds in boiled water for 10 to 15 minutes and then peel the skin. In this recipe I had soaked cashew nuts as well along with the almonds

Ingredients : measuring cup used – 250 ml
  • Fresh Peas – 1 cup
  • Milk – 1 cup
  • Ghee – 2 tbsp
  • Raw cane sugar – 3 tbsp (adjust)
  • Blanched almonds – 2 tbsp
  • Blanched cashews – 2 tbsp
  • Nutmeg Powder – 1/8 tsp
  • Cardamom Powder – 1/4 tsp
PROCEDURE :
  • Take the peas in a mixie jar and dry grind into a coarse paste. It should be ground coarsely, it should neither be fine paste nor with big chunks, but just a coarse paste.
  • Heat ghee in a pan/Karahi put coarsely ground peas and saute well on medium heat until raw smell vanishes
  • Now add in the milk, stir well, cover and let it come to boil. The milk you are using should be at room temperature
  • Reduce the heat and put sugar, stir well until sugar dissolves. Then put blanched almonds, cashews, nutmeg powder and cardamom powder and mix everything
  • Remove from the heat and allow it to cool down completely. You can serve this at room temperature or you can also refrigerate it and serve chilled
