GREEN GRAM HANDVO/SABUT MOONG HANDVO/ಗುಜರಾತಿ ಹೆಸರು ಕಾಳು ಹಾಂಡ್ವೋ

Handvo is basically a traditional Gujarati snack, which includes all the goodness in the form of vegetables and spices, grains and legumes, lentils and semolina etc etc.

As I have mentioned earlier also in my previous Handvo recipe, Gujarati Handvo is nothing but Karnataka’s our own aday dosay/adai dosa made in a different shape and flavour which is being enhanced with few extra set of ingredients which are added in the form of tempering.
So today I tried making this Handvo using whole green gram and I have not put any vegetables this time rather I have put sprouted (at home) green gram. What a healthy choice to consume for ourselves and also for our beloved family members.
Still have many ideas of making handvo in different verities exactly like how they do in Gujarat. Still have to try making baked handvo too and hope to publish all of them here on my blog. Shall also make video demonstration of this wonderful recipe too
Ingredients : measuring cup used – 250 ml
- Sprouted green gram – 1 cup
- Water – 1/2 cup (adjust)
- Green chili – 4 to 6
- Salt – 1 tsp
- Ginger – 1 tbsp
- Gram flour – 2 tbsp
- Semolina – 1/4 cup
- Onion – 1 cup
- Coriander leaves – 2 tbsp
- Oil – 2 tbsp
- White sesame seeds – 1 tbsp
- Mustard seeds – 1 tsp
- Cumin seeds – 1/2 tbsp
- Coriander seeds powder – 1 tsp
PROCEDURE :
- To make sprouted green gram, rinse well and soak green gram in potable/drinking water for 5 to 6 hours (the water should cover the beans well), then drain all the water, cover and let it sit for 9 to 10 hours, then you can actually notice the beans sprouting.
- Grind together sprouted green gram, green chilies, ginger and salt into a coarse paste and transfer to a bowl/container, also put gram flour, semolina, coriander leaves, onion and mix well
- Heat a tawa, preferably with edge or a wide pan, put and heat oil in it, once the oil is hot put sesame seeds, mustard seeds, cumin seeds and coriander seeds powder
- Once they splutter, spread the prepared batter on the tawa/pan, cover and let it cook for 8 to 10 minutes or until it turns golden brown in colour. Flip and cook on the other side too
- Remove from the tawa/Pan and let it cool for a while, then cut into pieces and serve along with any kind of chutney or sauce. Actually this can be consumed as such as well
