On some days I strongly get the feeling of creating something new in either cooking or kitting or crocheting or rangoli or with something or the other and if not these things, I go on drive and explore some new area or extension in Gurgaon etc

It just means, I have to do something new other than my regular routine but even if it includes something I have not done before in above mentioned skills and not like something entirely different

And today is one such day ! and I chose to create something new with cooking. Since this is summer, I was getting ideas to create something using either cucumber or raw mango and yesterday when I was chopping cucumber for making salad, I got an idea

And today I brought that idea into life !! I have used both cucumber and raw mango along with other herbs and spices in this Cucumber Pulao recipe

By the way today I also created my first ever amigurumi ie crocheted honey bee key chain and it also turned out super perfect without even a single mistake and I could make it with in few hours

Ingredients : measuring cup used – 250 ml

  1. Rice (sona masoori) – 1 cup
  2. Diced cucumber – 4 cups + 1 cup (for adding later)
  3. Green chili – 6 to 8
  4. Ginger – 1 tbsp
  5. Curry leaves – 1 big sprig
  6. Coriander leaves – 2 tbsp
  7. Raw mango – 1/4 cup (we can put little more also)
  8. Rock salt – 1&1/2 tbsp
  9. Water – as required

Others :

  • Ghee – 1 tbsp
  • Cumin seeds – 1&1/2 tsp
  • Curry leaves – 1 sprig

PROCEDURE :

  • Gather together all the ingredients from 2 to 8 listed below the heading ingredients , in a mixie jar and grind into very smooth paste without adding water
  • Put it in a strainer and collect the juice in a container, let it sit until almost all the juice is obtained and only the pulp remains in the strainer
  • Then, measure the obtained juice and add water to make it up to 2&1/2 cups in total (since we have taken 1 cup of rice, we need to add 2&1/2 cups of liquid, ie cucumber juice + water )
  • Heat ghee in a pressure cooker, put cumin seeds and curry leaves, Put the obtained Juice + water mixture and allow it to come to rapid boil
  • Once it starts boiling rapidly put well rinsed rice and 1 cup of diced cucumber, stir well and close the lid and cook until 1 whistle (1 whistle is enough in my cooker, you can do as per requirement)
  • That’s it…. yummy, hot cucumber pulao is ready

HOW TO MAKE CUCUMBER YOGURT RAITA OR DIP

  • Now take that cucumber pulp, Put hung curd or yogurt , put little more salt if required, stir well and serve this raita as an accompaniment along with Pulao or you can also use this as a dip
