Ridge gourd curry | Heerekayi Palya |

ಹೀರೇಕಾಯಿ ಪಲ್ಯ | ಹೀರೇಕಾಯಿ ಕರ್ರಿ |
One of the tasty, yummy curry to go with any kind of Indian flat breads or steaming hot rice or rotti as well as this can be served as an accompaniment along with huli(sambar), saaru (rasam) etc
This is my own, created recipe. Just gathered the stuffs which I felt would fit into this recipe which uses ridge gourd, a watery vegetable as the main stuff
This ridge gourd curry has now become one of my favourite curry, which also uses curd to get that creamy taste and texture
Ingredients : measuring cup used – 200 ml
- Ridge gourd, diced- 2 cups
- Water – 1/4 cup
- Kashmiri dried whole red chilies – 4
- Coriander seeds – 3/4 tbsp
- Peanuts – 1/4 cup
- Thick curd – 1/3 cup
- Turmeric powder – 1/2 tsp
- Red chili powder – 1 tsp (colour enhancing)
- Red chili powder (hot) – 1/2 tsp
- Salt – 1&/12 tsp
- Coriander seeds powder – 1 tsp
- Cumin powder – 1 tsp
Others :
- Oil/ghee – 1 tbsp
- Sesame seeds – 1/2 tbsp
- Cumin seeds – 1 tsp
- Onion – 1/2 cup
- Ginger – 1 tbsp
- Jaggery – 1 tbsp
- Coriander leaves – 1/2 cup
PROCEDURE :
- Heat a pan and dry roast coriander seeds, peanuts and whole red chilies until crisp

- Now take the thick curd in a bowl, put ground coriander seeds mixture, turmeric powder, both red chili powders, Coriander seeds powder, cumin seeds powder and salt and mix well


- Now put diced ridge gourd into curd mixture and mix well to get it well coated


- Heat ghee in a pan put sesame seeds, cumin seeds, ginger and coriander leaves, stir and let them splutter

- Now put the onion and roast everything well on medium heat, then Put the marinated ridge gourd mixture, put little water to the bowl and pour it back into the pan






- Now reduce the heat to low, cover the pan and let it cook, keep stirring in between

- Once the mixture starts leaving the ghee, put jaggery and mix everything well on high heat continuously


- Remove from the heat and the yummy ridge gourd curry is ready
