Ivy gourd spicy rice |Tondekayi bath |

This tiny green vegetable known by the name Ivy gourd or tindora or Kundru in Hindi or tondekayi in kannada, offers several health benefits because of its rich nutrient content and today I’m going to share a one pot meal made using this wonderful vegetable called tondekayi bath

This low in calorie but high in fiber and nutrients vegetable is used in treating various health issues like diabetes, cough, constipation, infections, Jaundice, fever, hypertension, Pain management etc

We all at home like this vegetable and very often I make mixed vegetable stir fry by adding ivy gourd along with few more vegetables, tondekayi ennegayi curry in the same way how I make brinjal ennegayi curry in two methods

I also make a kind of raita using Ivy gourd or tondekayi, the recipe of which I’m yet to share here on my blog, will do so asap and that recipe also turns out yum and much suitable for summer season

Ingredients : measuring cup used – 250 ml

  • Rice – 1 cup
  • Boiled water – 2&1/2 cups
  • Ivy gourd/tondekayi – 2 cups, cut lengthwise
  • Salt to taste
  • Tamarind juice – 1 tbsp
  • Jaggery – 1/2 tbsp

Others :

  • Ghee – 1 tbsp
  • Mustard seeds – 1 tsp
  • Green chili – 1 big
  • Hing – 1/4 tsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • Cashew nuts – 1/4 cup
  • Curry leaves – a fist full

To roast & powder :

  • Peanuts – 1/4 cup
  • Coriander seeds – 1 tbsp
  • Cinnamon – 1 inch piece
  • Green cardamom – 2 nos.,
  • Cloves – 3 nos.,
  • Black pepper corns – 1/4 tsp
  • Grated dry coconut – 1/2 cup
  • Whole red chilies, byadigi – 4 nos.,
  • Curry leaves – 2 sprigs

PROCEDURE :

  • To begin with, gather all the ingredients listed below the heading ‘To roast & Powder’ in a pan, dry roast until done and powder it
  • Heat Ghee in a pressure cooker, put all the ingredients listed below the heading ‘others’ and let them splutter
  • Now put ivy gourd and stir for couple of minutes, then put the prepared spice powder and mix everything well
  • Put well rinsed rice, boiled water and salt, tamarind juice, jaggery, stir everything well, close the lid and cook until done
  • Serve as such or along with any kind of raita. Today I paired this Ivy gourd spicy rice along with Sweet potato yogurt raita
