Bottle gourd Peel and Seeds Pulp Chutney |

It just strike my mind and immediately came into existence today. Yes I’m talking about today’s wonderful chutney recipe, which goes as an healthy, fiber rich, protein rich accompaniment along with anything and everything.

Till now I used to make chutney using only bottle gourd, but today felt like using both its peel and seeds along with its flesh/pulp as well to make chutney, I did and got this extraordinary result

Just by adding couple of extra parts of this vegetable, now the chutney has turned out to be more healthy like… it is fibre rich, vitamins rich besides being protein rich. Also let me tell you that this bottle gourd peel and seeds pulp chutney also tastes superb when eaten mixed with steaming hot rice

Ingredients : measuring cup used – 250 ml

  • Bottle gourd Peel – 1 cup
  • Seeds with pulp – 1&1/2 cups
  • Split bengal gram or Kadalebele – 1/4 cup
  • Fresh coconut – 1/2 cup
  • Green chilies – 8 to 10
  • Tamarind – 1 tsp
  • Rock salt – 1 tsp

For tempering :

  • Ghee – 1 tbsp
  • Mustard seeds – 1 tsp
  • Split black gram or uddina bele – 2 tsp
  • Curry leaves – 8 to 10 leaves

PROCEDURE :

  • Dry roast the peel, green chilies and bengal gram one by one in a pan, remove to a plate and set aside
  • Now in a mixie jar gather together both roasted stuffs and the remaining ingredients and grind slightly coarsely by adding sufficient water to get required consistency, then transfer to a bowl
  • Prepare the tempering using all the ingredients listed below the heading ‘for tempering’ and pour it on the prepared chutney
  • That’s it …. fiber rich, protein rich, healthy, yummy chutney is ready for further use
