Brinjal Potato curry made along with some nuts in it like almonds, cashews and walnuts ! Sounds interesting right ?

Below you can have a look at the recipe of this yummy, nutty flavoured, tangy, spicy curry which goes well along with anything and everything

This semi dry curry made with brinjal/eggplant and Potato is a tasty, flavourful, yummy side dish for your flat breads and rice. This is one of my personal favourite and I like to make it slightly spicy as well as tangy.

However while making this aloo baingan subji, long cut potatoes are being fried in considerably more oil until soft, its almost like deep frying, but I always would like to use less oil or ghee in anything I make, therefore I do cook whole potatoes until slightly soft, peel off the skin then cut into long

Ingredients : measuring cup used – 250 ml

  • Potato – 2 cups cut length wise
  • Brinjal – 3 cups cut length wise
  • Oil – 3 tbsp
  • Sesame seeds – 1/2 tbsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 2 tsp (less hot)
  • Cumin powder – 1 tsp
  • Amchur powder or dry mango powder – 1 tsp
  • Jaggery – 1&1/2 tsp
  • Salt – 1 tsp or to taste
  • Coriander leaves – 1/4 cup to sprinkle at the end

To crush or grind coarsely together :

  • Onion – 1 cup
  • Tomato – 1 cup
  • Almonds – 8 nos.,
  • Cashew nuts – 8 nos.,
  • Walnuts – 4 nos.,

PROCEDURE :

  • To begin with, boil potato (I cook whole potatoes, remove the skin and then cut length wise) and saute brinjal in 1/2 tbsp of oil and set aside both
  • Now in the same pan again heat 1/2 tbsp oil, put onion and saute until translucent, also add tomato and saute until turns soft and let it cool, then transfer to a mixie jar
  • Now also put almonds, cashew nuts and walnuts to the mixie jar and grind everything together coarsely without adding any water
  • Heat 2 tbsp of oil, put ground paste and fry for a minute or so on high heat, then reduce the heat to low, cover and let it cook. Keep stirring in between
  • Put turmeric powder, red chili powder, cumin powder, amchur powder, sesame seeds, stir and mix everything, then put salt and jaggery powder, mix everything again
  • Add brinjal and potatoes, combine everything well by stirring continuously on medium heat, reduce the heat fully, cover again and cook for couple of minutes, Remove from the heat and sprinkle coriander leaves
  • We can pair this finger licking yummy aloo baingan subzi or Potato brinjal curry along with any kind of flat breads
