Big Functions Style Huli Pudi or Sambar Powder|

Often in big functions like house warming, thread ceremony, wedding etc, an authentic, aromatic blend of huli pudi or sambar powder is usually prepared freshly on that day itself, which is just sufficient for immediately usage only
And making this function style huli pudi/sambar powder method differs from person to person and place to place and also it is made entirely different from what we make, store and use on everyday basis at our households. No or not much aromatic spices are put into huli pudi/sambar powder when it is made for functions purpose but kept simple with some basic regular ingredients.
Therefore today I’m going to share the recipe of huli pudi/sambar powder how it is made in marriages in Bengaluru. I learnt about this recipe from a caterer, who roughly mentioned the ingredients which all goes into the sambar, as I had tasted the sambar he made I could guess the quantity of all the ingredients and yes it does taste different from our regular huli pudi/sambar powder
However this huli pudi or sambar powder can also be put into any huli/sambar you make on everyday basis. And another way to make huli/sambar using this powder is, we can put less amount of cooked lentil and grind this freshly roasted stuffs along with grated fresh coconut
Ingredients :
- Coriander seeds – 1&1/2 tbsp
- Rice – 2 tsp
- Split bengal gram/Kadale bele – 4 tsp
- Split black gram – 2 tsp
- Fenugreek seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Black peeper corns – 1/2 tsp
- Dry coconut/Ona kobbari – 4 tbsp
- Byadigi/Kashmiri red chilies – 10 to 12
- Curry leaves – 1 sprig
- Hing/asafoetida – 1/4 tsp
- Turmeric powder – 1/2 tsp
PROCEDURE :
- Dry roast all the ingredients on medium heat without burning
- Let everything cool completely



- Then grind into powder
- Since we are making this powder in a very small quantity, no need to roast each ingredient separately, but if you are making it in large quantity, then roast everything separately
