Make Ugadi habba more special with this yummy, delicious, mouth watering, easy to make, fruit stuffed holige ie sebu hannina holige or apple puran poli – which needs no grinding !

I tried this apple puran poli or sebu hannina holige during the deepavali festival in 2024, and since then I have been making it

One of the yummiest desert made using a fruit. If you notice I have sweetened this holige with powdered red rock sugar, which is said to be minimally processed unrefined sweetener, compared to highly processed, chemically bleached nutrients lack refined white sugar

For the outer layer we can use only wheat flour or more amount of wheat flour and less chiroti rave or equal amount of wheat flour and chiroti rave or only chiroti rave or more amount of chiroti rave and less wheat flour etc etc. Therefore even I keep changing the combinations and proportions

Ingredients : measuring cup used – 250 ml

For the outer layer :

  • Whole wheat flour – 1 cup
  • Water – as needed to form a very soft, sticky and elastic dough (1/3 cup was enough for me)
  • Ghee – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Rice flour – 1&1/2 tsp
  • Oil – 2 to 3 tbsp to apply on the dough

For hoorana/stuffing :

  • Ghee – 1 tbsp
  • White sesame seeds – 1 tsp
  • Poppy seeds – 1 tsp
  • Cumin seeds powder – 1/2 tsp
  • Grated apple – 2 cups (grater with big holes)
  • Red rock sugar, powdered – 1/3 cup
  • Cardamom powder – 1/2 tsp
  • Milk powder – 1/4 cup

Powder together :

  • Almond – 1 tbsp
  • Cashew nuts – 1 tbsp
  • Raisins – 1 tbsp

PROCEDURE :

  • To begin with (above refer the heading, for the outer layer) take, ghee turmeric powder, rice flour in a Parath/wide bowl and rub it using your finger until it turns out buttery texture
  • Pass the wheat flour through a fine hole sieve and add it to the rubbed mixture and mix everything well, bind into a soft, sticky and elastic dough by gradually adding water
  • Now apply oil gradually little at a time and knead the dough for 5 to 6 minutes or until the dough becomes very soft and pliable
  • Cover and let it sit for 30 to 40 minutes or until you prepare the stuffing and it gets cooled completely
  • Now heat 1 tbsp ghee, put sesame seeds, poppy seeds and cumin seeds powder, when roasted put grated apple and roast the apple until moisture evaporates
  • Now put powdered sugar, cardamom powder and stir until the mixture turns almost dry, then put almond cashew raisin powder, milk powder and stir until the mixture leaves the edges of the pan, remove on to a plate/bowl and let it cool completely
  • Now knead again the rested dough once, divide and into equal portions, also divide the completely cooled stuffing into equal portions
  • take a portion of the dough, flatten it slightly, keep a portion of the stuffing in the centre, now seal it bringing together properly from all over
  • Now roll into a circle on a greased holige/butter paper with greased rolling pin, Put it on the heated tawa, after couple of seconds, remove the paper, cook on both the sides by smearing little oil/ghee
  • The Apple holige is ready, try it now and make your celebrations unforgettable with your family and friends
