SWEET CHUTNEY AND GREEN CHUTNEY FOR CHATS

In my opinion without these chutneys chats are incomplete. These chutneys enhances the overall taste of the chat. It is very simple to prepare. The very aroma and colour of these chutney itself attracts us to eat chats.
SWEET CHUTNEY:
INGREDIENTS :
- Seedless dates -1 cup
- Tamarind – 1/4 cup
- Jaggery (powdered) – 1/4 cup
- Roasted cumin powder – 1 tsp
- Red chilli Powder 1 to1 1/2 tsp
- Salt as per taste
PROCEDURE :
- Soak tamarind in 1/2 cup of warm water for half an hour
- Cook dates in 1 cup of water till it becomes soft
- Cool and grind the cooked dates into a fine paste ( if needed you can add little extra water)
- Squeeze thick juice out of soaked tamarind
- Heat the pan and add ground dates, 5-6 tbsp of tamarind juice/pulp,jaggery,cumin powder, red chilli powder and salt
- Mix everything well and let it boil till chutney becomes thick
- Take out from the fire , cool it a little and then refrigerate it.
- Sweet chutney is ready to serve with any chat
GREEN CHUTNEY
INGREDIENTS :
- Coriander leaves – 1 & 12 cups
- Mint leaves – 1/2 cup
- Ginger – 1/2 an inch piece
- Green chilli – 6 to 8
- Chat masala – 1/4 tsp ( optional)
- Salt to taste
- Water – 1 to 2 tsp if needed
PROCEDURE :
- Wash and rinse coriander and mint leaves
- Put it into the mixie jar along with the other ingredients
- Grind to a smooth paste
- The consistency should not be too thick or too thin
- Remove from the mixie jar and refrigerate
- Green chutney is ready to serve with any chat
