Carrot stuffed sweet flat bread| Carrot holige|

ಬೆಲ್ಲದ ಕ್ಯಾರೆಟ್ಟಿನ ಹೋಳಿಗೆ sweetened with jaggery |

This is something which I tried with left over carrot halwa. I never thought it would serve a day’s breakfast programme !! but it did so happy me !

So gladly sharing it with you all. First I thought of making paratha, while in the process it strike my mind why not Poori !!?? however tried making stuffed poori as well. Everybody at home liked it very much, so from now on wards these two dishes will be considered for regular breakfast at our place

The halwa, which I have put in this Paratha was made using red carrots or winter carrots that are available in plenty during winter. However we can also use orange coloured carrots which are available during the remaining time of the year.

The exceptional thing about this recipe is, I have put cumin powder in the stuffing, which enhances the taste as well as aroma of this sweet dish. The Paratha/Holige turns out very aromatic and taste wise also you can feel that change. Overall the Paratha/holige tastes differently yummy

And if you want to make the stuffing separately, then follow the method of Carrot halwa recipe. Except for adding the almonds, rest follow the same method and prepare the stuffing, then you can continue further with following the method in this recipe for preparing stuffing

Ingredients : measuring cup used – 250 ml

  • Wheat flour – 1 cup
  • Fine sooji/chiroti rava – 1/2 cup
  • Salt –  a fat pinch
  • Water – little less than 3/4 cup
  • Rice/wheat flour – for dusting
  • Oil/ghee – for roasting the holige

For stuffing :

  • Carrot halwa – 1&1/2 cup
  • Mixed dry fruit & nuts – 3/4 cup (chopped 2 tbsp of each almond, Pistachios, cashews, walnuts and raisin
  • cinnamon powder – 1/8 tsp
  • Cloves powder – 1/8 tsp
  • Cardamom powder – 1/4 tsp
  • Cumin powder – 1/2 tsp

PROCEDURE :

For Paratha :

  • Mix wheat flour, chiroti rava and salt and knead it into a stiff soft dough by adding required water. You need to knead the dough really well until soft, as it contains semolina
  • Pulse together herbs and chopped dry fruit & nuts in a mixie jar keep it coarse
  • Mix halwa, dry fruits powder, cinnamon, cloves, cumin & cardamom powder
  • Take a portion of the dough and stuff it with a portion of halwa dry fruit & nuts mix, cover properly from all the sides
  • Roll it dusting with rice flour (Paratha & poori turns out crispy, if rice flour is used for dusting)
  • Heat the griddle and roast it on both the sides by smearing little oil/ghee and serve

For Poori :

  • Pinch a portion of the dough, stuff a portion of halwa dry fruit & nut mix
  • Roll into a thick small circles
  • Heat oil and deep fry them on both the sides
