SWEET POTATO| SHAKARKAND CURRY| SIHI GENASINA SAGU|

This curry is created by me ie… my own recipe with the previous basic knowledge of what all ingredients to be used with sweet potato. It is awesome. It goes well with any type of roti, rotti, poori, chapati, paratha and rice as well. During winter its an apt dish as we get quality sweet potatoes and also spices like pepper powder, cumin seeds are used more due to the cold weather, so good for health and this is a tasty dish as well.
Ingredients:
- Sweet potato – 2 big
- Ghee – 1/2 tbsp
- Cumin seeds – 1 tsp
- Black pepper powder – 1/2 tsp
- Green chilli (chopped) – 1 big
- Black lentils ( Urad Dal) -1&1/2 tbsp
- Curry leaves – few
- Coriander leaves – 2 tbsp
- Grated dry coconut – 1/4 cup
- Turmeric powder – 1/2 tsp
- Salt to taste
- Water as needed
PROCEDURE:
- Wash and cook sweet potatoes and peel the skin, mash roughly
- Heat ghee in a pan, add cumin seeds, black lentils, green chilli, curry leaves & coriander leaves and saute for a minute
- Also, add pepper powder, turmeric powder and coconut saute for a minute
- Add mashed sweet potato and salt…. combine everything well
- Add water to the needed consistency
