GREEN VEGETABLES CURRY| GREEN SAGU|

This is called as green sagu, because this is a sagu/curry prepared using only green vegetables. This is also made by putting less spices and ingredients. Again a healthy version of accompaniment with Poori, roti, chapati, rotti and rice. This curry goes well with set dosa/dosay as well.

Ingredients :
Chopped vegetables :
- Spinach – 1 cup
- Broccoli florets – 1/4 cup
- French beans – 1/4 cup
- Green Peas – 1/4 cup
- Fresh Green Chickpeas – 1/4 cup
For Grinding :
- Coriander leaves – 1/2 cup
- Green chilli – 4 nos., or according to spice level
- Roasted chana ( hurigadale ) – 2 tbsp
- Cumin seeds – 1 tsp
- Khus-Khus – 1&1/2 tbsp
- Grated fresh coconut – 1&1/2 tbsp
- Turmeric Powder – 1/4 tsp
- Salt to taste
For Tempering :
- Oil – 1/4 tsp
- Mustard seeds – 1/4 tsp
- Curry leaves – few
PROCEDURE:
- Steam all the vegetables together and add required amount of salt
- Grind the ingredients under the heading ‘ For grinding ‘ adding little salt (as required)
- Add ground paste to the cooked/steamed vegetables and let it boil , Add water to get the desired consistency
- Prepare the tempering and pour it on the ready Sagu and serve
