Quick sambar for idly |lentil less sambar for idly |

ಇಡ್ಲಿ ಸಾಂಬಾರ್ | ಬೇಳೆ ಹಾಕದೇ ಮಾಡಿರುವ ಸಾಂಬಾರ್ |

I prepare sambar in many ways, now going to share one of those method… this is my own recipe of making sambar but by adding regularly used ingredients for sambar, just the procedure is absolutely mine.

In this recipe I’m not using Lentil or lentil water, its a non lentil sambar recipe or sambar sans any lentil and this is in a way instant and quick.

This recipe is curated for 1 litre water. All the proportions of ingredients are perfect for making sambar by using 1 litre of water.

You can also put small portions of steamed french beans, carrot, Mangalore cucumber/bannada southekayi etc to this sambar there by to make it more fiber rich and also to enhance the over all taste of the sambar

 Ingredients :

  • Onion – 1 big
  • Tomatoes – 2 big
  • Tamarind Juice – 1 tbsp (thick)
  • Jaggery – 1 tbsp
  • Salt to taste

For roasting and grinding :

  • Coriander seeds – 1 tbsp
  • Mustard seeds – 1/4 tsp
  • Cumin seeds – 1/4 tsp
  • Fenugreek seeds – 1/4 tsp
  • Black Pepper – 1/4 tsp
  • Whole red chilli – 6 nos., which gives colour but not hot
  • Hing – 1/8 tsp

For Tempering :

  • Ghee – 1 tbsp
  • Mustard seeds – 1/4 tsp
  •  Turmeric Powder – 1/2 tsp
  • Curry leaves

PROCEDURE :

  • Chop the onion and tomato
  • Boil 1 litre water and add 1/2 portion of chopped tomato into it and allow it to boil
  • Dry roast all the ingredients under the heading ” For roasting & grinding ” , and grind it along with remaining 1/2 portion of chopped tomato, and add it to the bubbling tomato water
  • Heat ghee in a pan, add mustard seeds, turmeric powder, curry leaves and Chopped Onion and fry until onion turns soft… and add it to the bubbling tomato mixture
  • Now add salt, tamarind juice and jaggery, boil further for couple of minutes and…
  • The sambar is ready to serve. Dip the idly in sambar and enjoy hot steaming idly – sambar
