Southekayi avalakki is a no fire, simple, summer friendly recipe, in which southekayi translates to cucumber (kheera) and avalakki translates to flattened rice (poha).

No cooking is needed in this recipe except for the tempering. Since this is a very filling dish , we can have it for breakfast with a glass of Lassi/buttermilk. I make it using both red rice poha and white rice poha, and once in a while it could also be eaten by diabetic people when made using red rice poha and we can increase the quantity of cucumber and use still less quantity of poha while serving them.

Below is the recipe of how I make this yummy  Southekayi avalakki/cucumber poha.
