POTATO SAGU / ALOO SUBJI

This is the south Indian version of potato sagu and almost the same set of ingredients are used to make Aloo – tamatar subji here in north India. Potato sagu is the best combination with any kind of set dosa/dosay, ie…be it rice or ragi. Today I’m not going to write any details but straight away going to write the recipe of sagu.

Ingredients :
- Potato – 1 big
- Onion – 1 big
- Tomato – 1 big
- Ghee – 1/2 tbsp
- Mustard seeds – 1/4 tsp
- Bengal gram – 1 tbsp
- Urad dal – 1/2 tbsp
- Green chillies – 4 to 6 (adjust)
- Curry leaves – few
- Turmeric powder – 1/2 tsp
- Red chilli powder – 1/4 tsp
- coriander leaves – 2 tbsp
- Salt to taste
PROCEDURE :
- Peel the skin and cook the potato, chop onion and slice tomato
- Heat ghee in a pan, add in mustard seeds, bengal gram, urad dal, slit green chilli, curry leaves and saute it
- Now add in onion and saute it for 2 minutes, then add in tomato, saute it again, now add in turmeric, red chilli powder and fry for a minute
- Now add in little water, when it starts boiling add in cooked potato along with its water and salt, combine everything well while mashing the potato
- Close the lid and allow it to boil for some time, keep stirring occasionally
- Turn off the fire and sprinkle coriander leaves and serve
