EGG LESS-WHOLE WHEAT-BANANA MUFFINS….also using dry black grapes

It’s Christmas ! obviously Feel like baking some cakes, cookies etc. Today baked muffins using banana and dry black grapes and it is just yummy…delicious & awesome. This is my first attempt at making muffins and they turned out too good. Earlier I have made very few cakes, stopped baking in between and again have started it thinking that I should definitely bake something or the other at least for twice in a month. Browsed through many recipes and made it/created in my own way.
Ingredients : (measuring cup used – 240 ml)
Serves 10 muffins of below shown size
- Whole wheat flour – 2 cups
- Baking soda – 1/2 tsp
- Salt – 1/4 tsp
- Mashed banana – 1 cup (4 medium sized)
- Raw cane sugar – 1/2 cup
- Oil – 1/3 cup
- Water – little less than 1/2 cup
- lemon juice – 1 tsp
- Dry black grapes – 1/4 cup (adjust)
- Rolled oats – to sprinkle on the muffins
- Cardamom powder – 1/8 tsp
PROCEDURE :
- Preheat the over at 180 C for at least 15 to 20 minutes (I did for 20 minutes)
- Place muffin cups in a muffins tray and keep it ready
- In a mixing bowl mash well the ripe bananas, add in sugar & water and mix well till sugar dissolves completely and then add in oil and lemon juice, combine everything well
- Sieve together the flour, baking soda and salt
- Add dry grapes and sieved flour slowly into the liquid mixture
- Now mix everything well until just combined, do not over mix
- In a ladle or spoon put the batter into the muffin cups, sprinkle oats and bake them for 30 minutes
- Baking time may vary depending on the oven using, it took 30 minutes for me
- Check with a knife/toothpick for whether it is baked, take out and allow it to cool completely
- Home made egg less whole wheat banana muffins are ready to be relished
