A very healthy diabetic friendly paratha, which has got amazing health benefits. They have high quantities of folic acid, calcium, carbohydrates, fibre, proteins etc all of which are considered as important in proper functioning of our body.
Some of the health benefits of rajma/Kidney beans are… good for diabetics, lowers cholesterol, improves memory, boosts energy, power house of proteins, natural detoxifier, prevents hypertension, helps in for weight loss, relieves constipation, boosts immunity, has anti ageing properties, cleanses stomach, improves heart health, strengthens the bones, helps in tissue repair, reduce migraine, cataracts, relieve arthritis, asthma etc.
I make rajma masala, which I learnt many years back when we shifted to Gurgaon, from my neighbour and this time I made Paratha by using same beans. You can serve this roti/paratha with any curry, subji, chutney etc.
Below I have posted two pics of this rajma Paratha being paired along with mixed vegetable sagu in one pic and one more with Potato-tomato/aloo-tamatar subji.
I make this Paratha by adding ground/powdered rajma (I use chitra rajma, which is said to be of the good quality) with whole wheat flour or multi grains flour along with small quantity of rolled oats.
Both tastes delicious and both are very beneficial for health. Below mentioned quantities make 8 nos., of rotis/parathas of considerably big size.

- Kidney beans – 1/2 cup
- Whole wheat flour/Multi grains flour – 2 cups
- Oats flakes/rolled oats – 2 tbsp
- Red chilli flakes – 1/2 tsp (adjust)
- curry leaves – few
- salt to taste
- Water to knead the dough

PROCEDURE :
- Grind rajma into a fine powder along with oats in the mixer grinder
- Transfer it to a wide bowl, put wheat flour, salt, red chilli flakes and curry leaves along with that

- Combine everything well and knead into soft and stiff dough using sufficient water
- Pinch a portion and roll into a thin circle or any shape by using flour for dusting and apply little oil/ghee and fold as you like, roll it a little, and roast it on both the sides on a heated tawa

- You can roll it into a triangular shape too.
