FRENCH BEANS STIR FRY/ಹುರಳೀಕಾಯಿ ಪಲ್ಯ

A tasty, easy vegetable palya/subji/stir fry recipe from southern side ie … Namma Bengaluru, which is made on regular basis. Actually making this kind of subji using any single vegetable is a kind of regular dish in most of the south Indian households. It is one of the basic, less spicy recipe, which is very quick to make and learn.
Normally during festivals, functions two or more kinds of palya is definitely served. And on regular days also it is made as an accompaniment with huli (sambar), saaru (rasam) or to go with chapati or eaten mixed with white rice etc.
We can also make similar kind of palya/subji/stir fry using cucumber, red pumpkin, carrot, beetroot, cabbage, chow-chow (chayote squash), green peas etc. Today I have used french beans/huralikayi for making this palya.

Ingredients : measuring cup used – 250 ml
- French beans/huralikayi – 1 cup (chopped)
- Coriander leaves – 2 tbsp
- Grated fresh coconut – 1/3 cup
- Salt to taste
- Water – 1/2 cup or as required
Others :
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- Split bengal gram – 1/2 tbsp
- Split black gram – 1 tsp
- Green chilli or red chilli – 2 (adjust)
- Curry leaves – few
PROCEDURE :
- Heat oil in a pan add in all the ingredients listed below the heading ‘others’ and let them splutter
- Now add in chopped french beans, saute for couple of minutes and then add in water, combine well, cover and allow it to cook on medium heat
- Once you find the beans soft, add in salt, coconut and coriander leaves and mix them well while stirring
- Remove from the heat and use as needed
