JACK FRUIT SEMOLINA BATH/SHEERA/HALWA with the goodness of jaggery

Jack fruit is my most favorite fruit among all…. so I had bought it in large quantity. But actually more than half of it I ate as such, so with the remaining fruit I could make only two items ie… semolina bath and Idly. I don’t know or haven’t seen anybody making semolina bath/sheera/halwa using jack fruit, anyway I tried it and it was too yummy, even everyone at home liked it very much. Here is how I made it.
Ingredients :
- Semolina – 1/2 cup
- Water – 1&1/4 cup
- Jack fruit – 1 cup chopped
- Jaggery – 1/3 cup (adjust) (you can also use sugar)
- Water – 1/4 cup
- Saffron strands – 1/4 tsp (optional)
- Ghee – 4 tsp
- Almond or melon seeds – 2 tbsp
PROCEDURE :
- Roast the semolina until it releases the nice aroma using 1 tsp of ghee, but careful not to burn it
- Boil 1&1/4 cup of water in a pan, put saffron strands if using, turn the heat to sim and add roasted semolina and allow it to get cooked
- Meanwhile dissolve jaggery using 1/4 cup of water, pass it through the strainer and keep it aside
- Heat 2 tsp of ghee in a separate pan, add in almond pieces or melon seeds, roast them, add in chopped jack fruit and fry until it becomes little soft on medium heat
- Now add in jaggery syrup and sauteed jack fruit + nut mixture and remaining 1 tsp of ghee to the cooked semolina in the pan (let the heat remain on low through out)
- Stir nicely while combining everything well until the mixture leaves the edges of the pan
- Serve hot
