Curry/subji using Pineapple and POPCORN !!??

Yes you read/heard it right.

A very rare kind of a subji, using popcorn and pineapple which my both the sons relish happily whenever made. This is one such dish/recipe which though I prepare often at my place and is also everyone’s favorite, but did not/could not click and never posted it here on my blog. But today I could do so and very happily sharing the recipe with you all. I learnt this recipe very very long ago, when my kids were too young and were very fond of popcorn and they were very much surprised when the first time I made this and enjoyed well relishing it too. It goes well with any kind of rotis, chapati or poori, phulka etc etc.

Ingredients : measuring cup – 250 ml, servings – 4

  • Pineapple (cubed) – 3 & 1/2 cup
  • Pineapple paste – 1/2 cup
  • Popcorn – 3 to 4 cups (adjust, actually no any strict measurement for this, you can add as per wish)
  • Oil – 2 tsp
  • Cumin seeds – 1 tsp
  • Grated ginger – 1/2 tbsp
  • Curry leaves – 2 strings
  • Chopped onion – 1 cup
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp (hot/spicy)
  • Palyada pudi OR garam masala powder- 1 tsp
  • Jaggery – 1 tsp
  • Grated fresh coconut – 1/3 cup (adjust) (optional)
  • Coriander leaves – 2 tbsp
  • Salt to taste

PROCEDURE :

  • Cook pineapple cubes aldentely using 1/2 cup of water, cover and keep it aside (You can use its stock itself to make pineapple puree)
  • Heat oil in a pan, add in cumin seeds, ginger and curry leaves, stir well and add in onion and saute well un till it turns translucent
  • Now add turmeric powder, red chili powder, garam masala powder stir well, then add in pineapple puree and jaggery and let it boil while stirring occasionally
  • Now add in ardently cooked pineapple cubes, coconut and coriander leaves and salt, stir for a minute more and remove from the heat
  • Just before serving, mix the popcorn into the subji, strictly not before for it turns out saggy.
