INSTANT BASUNDI & INSTANT CUSTARD APPLE/SEETHAPHAL BASUNDI/ಇನ್ಸ್ಟಂಟ್ ಬಾಸುಂದಿ/ಸೀತಾಫಲ ಬಾಸುಂದಿ

One of the most favorite milk based sweet dessert recipe which can also be made instantly within minutes. Recently for Diwali I had made this sweet dish. So sharing the recipe with you all. (We just ate it at room temperature, but you can refrigerate it to have the chilled one)

Ingredients : measuring cup used – 250 ml
- Milk – 1 cup + 3 tbsp
- Milk powder – 5 tbsp (I have used Amul spray milk powder)
- Sugar – 2 to 2&1/2 tbsp (I have used powdered date rock palm sugar)
- Ghee – 1/2 tbsp
- Saffron strands – 1/8 tsp (but I have put 1/4 tsp)
- Cardamom powder – 1/4 tsp
- Chopped almonds & Pistachios – 1&1/2 tbsp each
PROCEDURE :
How to make plain basundi –
- To begin with put saffron strands in 1 cup of milk and set aside
- In a pan bring together both ghee and 3 tbsp of milk and stir until both gets mixed well on medium heat
- Now reduce the heat and add in milk powder and stir the mixture continuously until it leaves the pan on low heat only
- Once the mixture comes as a whole add in the saffron mixed milk, mix and stir well, then add in the sugar and boil until you get desired thickness
- Once the desired thickness is obtained add in chopped dry nuts and cardamom powder, stir for a minute, then remove from the heat
- Garnish with nuts and serve
How to make Seethaphala/Custard apple Basundi –
Following this Plain Basundi method, made instant custard apple/Sharifa/seethaphal/seethaphala basundi with couple of variations.
I have put ……
- 1/8 tsp of saffron strands, and have added only
- 1 tbsp of powdered date rock palm sugar
- for 1 cup of custard apple pulp (obviously removed the seeds), rest followed the same method
