HOT & SWEET PLUM MUFFINS ….egg less delicious tea time snack using whole wheat flour

Today sharing one of the yummy, healthy, nutritious and delightfully tasty muffin recipe, created on my own. It means the ingredients and their quantity are fully based on my own imagination. All the credit goes to our awesome baker Sonia Gupta ma’am for making me this much capable in baking. From now on I do keep sharing my baked goodies recipes as well whenever possible.

First of all this is a egg less recipe which uses whole wheat flour and the seasonal fruit ie Plum as the main ingredient. Now plums are in the season, so thought of making use of it. Wanted to try something using mango as well, but till now not made anything. I think I should hurry up before the season ends.

Whatever I bake it will not be on the more sweeter side rather moderately sweetened as we all at home like it that way. And regarding this recipe, the plums were on the sour side, so made it sweet & spicy kind of thing to balance the overall taste.

So below is the recipe for the moist, simply superb Plum muffins !

Instructions :

  • Tin size – NA
  • MW temperature – 180 degree c
  • Baking time – 22 minutes
  • Demould Instructions – NA
  • Cooling time – 10 minutes

Ingredients : measurements using weighing scale, makes 10 muffins

  • Whole wheat flour – 200 gm
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp
  • Flax Seeds Powder – 1 tbsp
  • Green Chili – 6 to 8
  • Ginger – 1 inch
  • Salt – 1/2 tsp
  • Thick Curd – 100 gm
  • Oil – 80 ml
  • Raw cane sugar – 100 gm
  • Chopped Plum – 100 gm
  • Indian Lemon Flavor – 1/2 tsp
  • Milk – 80 ml
  • Sliced Plum – for topping (Optional)
  • Oats – 1 tbsp

PROCEDURE :

  1. Gather green chili, ginger and salt together and make a paste without adding water
  2. Mix curd, oil, raw cane sugar in a mixing bowl. Ensure that the sugar dissolves completely
  3. Add the chili ginger paste, chopped Plum and mix
  4. Sift wheat flour, baking powder and baking soda directly into the wet ingredients
  5. Add flax seeds powder, Indian lemon flavor and milk
  6. Mix everything and make a batter of dropping consistency
  7. Fill each muffin liner with the prepared batter (grease well with the butter if using aluminum muffin cups)
  8. Place a sliced piece of plum and sprinkle the oats on all of them
  9. Bake these in a preheated oven at 180 ° C for 22 minutes
  10. After 22 minutes take the muffins out and do the toothpick test
  11. Let the muffins rest for 10 minutes and serve the delicious hot & sweet plum muffins
