TOMATO RICE WITH ONION-CUCUMBER RAITA/ಟೊಮೇಟೊ ರೈಸ್ ಬಾತ್-ಈರುಳ್ಳಿ ಸೌತೇಕಾಯಿ ರಾಯ್ತ

This one is my most favourite rice preparation. I’m ready to relish this favourite rice dish any day any time and if needed all the three time of the day !! sounds crazy… isn’t it !!
I’m preparing this dish in this same procedure since many years, say for around twenty six (26) years and don’t ever like to make even a small change. I like this rice dish the most when Paired with onion cucumber raita….. tastes awesome !
I have even prepared this rice adding fresh green chickpeas, which is available only during winters and that also tasted equally good.
There are numerous methods and ways are followed to prepare this particular rice dish. You can find many tomato rice recipes on net & you tube, and this is exclusively my method of making it which I never ever like to change.
Below I have mentioned as LDE powder in the ingredients list. LDE powder is nothing but, equal amount/measurement/quantity of Laung (cloves), Dalchini (cinnamon stick) and Elaichi (green cardamom) being grind together into fine powder. Apart from adding LDE powder to this tomato rice, we can add it to many other kinds of Pulao, masala rice etc as well.
Ingredients : measuring used – 250 ml
- Rice 1 cup
- Boiled water – 1&3/4 cup
- Tomato – 3 big
- Onion – 1 big
- Green chili – 4 (adjust)
- Ginger – 1/2 tbsp
- Oil – 1 tbsp
- LDE powder – 1 tsp
- Red chili powder – 1 tsp
- Coriander seeds powder – 2 tsp
- Turmeric powder – 1/2 tsp
- Salt – 1&3/4 tsp
- Coriander leaves – 2 tbsp
PROCEDURE :
- To begin with wash and rinse the rice well, drain all the water and set it aside. Chop the onions and tomatoes and slit the green chilies, keep everything ready
- Heat oil in the cooker, add the LDE powder, ginger, green chili and onion and saute everything well until onions turn translucent
- Now add chopped tomato and saute everything again until tomatoes turn slightly soft
- Reduce the heat to minimum, now add turmeric powder, red chili powder and coriander seeds powder, stir for a minute
- Now add the rinsed rice, mix everything well continuously on high heat for a minute, add salt and boiled water and stir again
- When the mixture starts boiling again, cover the lid and give it one whistle (one whistle is enough in my cooker, you can do as per your requirement)
- Remove from the heat, let it cool completely, open the lid and sprinkle the coriander leaves, enjoy hot steaming tomato rice along with onion – cucumber raita.
