One of healthy choice to make for one pot meal any day. Make this beetroot pulao and I’m sure you’ll have that satisfaction of serving your family one of the healthy, yummy , filling dish.
Beetroot is one of those vegetables which we often like to consume though not so willingly but considering its innumerable health benefits on our body.

Ingredients : measuring cup used – 250 ml
- Basmati rice/Sona masuri rice -1 cup
- Boiled water – 1&1/2 cup
- Oil – 1&1/2 tbsp + 1 tsp
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1 tsp
- Ginger – 1tsp
- Curry leaves – 2 sprigs
- Coriander leaves – a fist full
- Bay leaf – 2 small or 1 big
- Onion – 3/4 cup
- Fresh peas – 3/4 cup
- Potato – 3/4 cup
- Beetroot – 1 cup
- Turmeric powder – 1/2 tsp
- Red chili powder – 1/2 tsp
- Coriander seeds powder – 1 tsp
- Palyada pudi – 1 tbsp or (1/2 tsp of garam masala powder)
- Salt – 1&3/4 tsp
- Cashew nuts – 1 fistful
- Lemon juice – 1 to 2 tbsp
PROCEDURE :
- To begin with, heat 1 tsp of oil and roast the beetroot (if cut into small cubes or length wise, tastes better than bigger cubes) until half cooked on low heat
- Wash and rinse well the rice, drain all the water and set aside
- Now heat remaining oil in a pressure cooker, put mustard seeds, cumin seeds, ginger, curry leaves, coriander leaves, cashew nuts and bay leaf, stir everything once
- Now put onion, potato and peas, sauté everything well for couple of minutes
- Now add roasted beetroot, turmeric powder, red chili powder, coriander seeds powder, Palyada pudi and salt, stir and mix everything well
- Now add rinsed rice and boiled water, once you see the water bubbling again, close the lid and pressure cook until one whistle
- Once cooled down completely, add lemon juice, mix well and enjoy yummy beetroot pulao
