Cucumber seeds tambuli or curd curry |

ಮಂಗಳೂರು ಸೌತೇಕಾಯಿ ತಿರುಳಿನ ತಂಬುಳಿ | ಬಣ್ಣದ ಸೌತೇಕಾಯಿ ತಿರುಳಿನ ತಂಬುಳಿ |
One of the healthiest starters recipe, which is an age old traditional one as well. The specialty of this watery vegetable cucumber is such that, nothing of it is discarded but everything is consumed ie the skin, flesh, seeds and soft centre part, literally everything !
Today I’m going to share the recipe of Mangalore cucumber seeds tambuli or curd curry which we are supposed to consume at the very beginning of the meal along with a slightly small portion of rice
We, the people of malenadu (western ghats of Karnataka) and south canara make this dish called tambuli using almost everything ie we make numerous number of tambuli recipes.
We can also use regular green cucumber in place of mangalore cucumber or bannada southekayi as we call that vegetable in our Kannada language. Here the word ‘bannada’ translates to ‘colourful’ and ‘southekayi’ translates to ‘cucumber’
Ingredients : measuring cup used 200 ml
- Mangalore cucumber seeds & pulp or bannada southekayi tirulu – 1&1/2 cup
- Fresh coconut – 1/2 cup
- Cumin seeds – 1 tsp
- Black pepper corn – 1/2 tsp
- Rock salt – 3/4 tsp
- Yogurt (homemade) – 3/4 cup
For tempering :
- Ghee – 1 tbsp
- Mustard seeds – 1 tsp
- Ginger – 1 tsp
- Curry leaves – 2 sprigs
- Coriander leaves – 2 to 3 tbsp
PROCEDURE :
- This is mangalore cucumber or bannada southekayi as we call this in Kannada, cut it into four parts and scoop out the seeds along with pulp


- Gather together seeds along with pulp, coconut, cumin seeds, pepper corns and salt in a mixie jar and grind into a smooth paste



- Transfer it to a container/bowl and add yogurt and mix well


- Prepare the tempering and pour it on the yogurt ground paste mixture




- Healthy, yummy cucumber seeds tambuli is ready in minutes
