BRINJAL RICE| BRINJAL RICE BATH| VANGIBATH

Vangi is a Tamil word, meaning brinjal. A particular type of masala powder is made to prepare this rice & it is called ‘vangi bath powder’. Vangi bath ( Brinjal Rice) is a nice aromatic, spicy rice preparation, which is one of the authentic dishes. In this rice preparation, we have to prepare brinjal curry first , then it should be mixed with cooked rice. The same masala powder can be used to make the rice bath using other vegetables like… Beans, Potato, Capsicum, Cluster beans etc. This masala bath can also be made using semolina / sooji in place of rice.

Ingredients :
For making Vangi bath Powder :
- Coriander seeds – 2 tbsp
- Bengal gram – 1&1/2 tbsp
- Black gram/urad dal – 1 tbsp
- Grated dry coconut – 2 tbsp
- Red chilli – 6 nos., for colour & 2 to 4 nos., for spiciness
- Curry leaves – few
- Cinnamon – 1/2 ” piece
- Cloves – 3 nos.,
- Green cardamom – 1 small
- Asafoetida – 2 to 3 pinches
- Turmeric Powder – 1/4 tsp
For Rice preparation :
- Cooked Rice – 2 cups
- Oil – 2 tbsp
- Mustard seeds – 1/4 tsp
- curry leaves – few
- Brinjal – 1 cup ( cut length wise )
- Turmeric powder – 1/2 tsp
- Vangi bath powder – 2 tbsp or according to spice needs
- Sugar – 1/4 tsp
- Salt to taste
PROCEDURE :
- Dry fry all the ingredients under the heading ‘ for making vangi bath powder’
- Let it cool for few minutes, then powder it coarsely ( fine sooji texture ) and keep aside
- Heat oil in a pan , add mustard seeds, curry leaves , when it splutter … add brinjal and saute it till soft
- Add turmeric powder, Vangi bath powder, salt & sugar
- Mix everything properly on medium flame
- simmer the flame and now add cooked rice, add salt according to the rice quantity
- Combine everything well and take out from the fire
- Brinjal rice / Vangi bath is ready to serve
