VERMICELLI PUDDING| SHYAVIGE KESARI BATH|

We make rava kesari, rice kesari, rice rava kesari , Beaten rice(poha) kesari… and now its vermicelli / shavige kesari. Its too yummy to eat and easy to prepare. One can definitely prepare this when guests are expected. Healthy sweet version of vermicelli …I felt. Its tastes better when served hot.
Ingredients :
- Shavige / Vermicelli – 1 cup
- Ghee – 2 tbsp
- Water – 2 cups
- Sugar – 3/4 cup
- Dry fruits & nuts – 1/4 cup (almond,cashew,raisins, walnut)
- Saffron strands – 1/4 tsp
- Cardamom powder – 1/4 tsp
- Grated dry coconut – 1/4 cup
PROCEDURE :
- In a vessel keep the water to boil, take out 2 tbsp of this boiling water in a small cup and soak the saffron strands in it
- Heat ghee in a pan, add dry fruits & nuts and vermicelli and roast it
- Vermicelli does not take much time to get roasted
- Once it is done , pour boiled water, soaked saffron strands to it and slower the flame… let it cook
- Then add sugar and stir well till it leaves the edges of the pan
- Add cardamom powder, mix everything well
- Take out and sprinkle grater dry coconut & serve
