Mixed vegetables Subzi | Mixed vegetables stir fry|

ಮಿಶ್ರ ತರಕಾರಿಗಳ ಪಲ್ಯ | ಮಿಶ್ರ ತರಕಾರಿಗಳ ಹುರಿದು ಮಾಡಿದ ಪಲ್ಯ |
This is one of our most favourite mixed vegetables stir fry. A simple, quick & crunchy palya which has the goodness of varieties of vegetables. The only spice used in this is red chilli powder.
This goes well with almost everything as in Poori, Phulka, roti, akki (rice) rotti, rasam rice, curd rice etc. It has all nutrients preserved as the vegetables are not cooked until very soft by adding water, Its just tossing it for a while.
Today I paired this palya along with Whole wheat flour-Bottle gourd rotti (roti) & Rice flour-Bottle gourd rotti (roti)
Ingredients : measuring cup used – 250 ml
Vegetables cut length wise
- French beans – 1 cup
- Carrot – 1 cup
- Baby corn – 1 cup
- Carrot – 1 cup
- Ivy gourd – 1 cup
- Onion – 1 cup
- Oil – 1&1/2 tbsp
- Cumin seeds – 1 tbsp
- Curry leaves – 1 fist full
- Salt – 1 tsp
- Sugar/jaggery – 1 tsp (I have put powdered red rock sugar)
- Coriander leaves – 1/4 cup
Others :
- Ghee – 1&1/2 tbsp
- Turmeric Powder – 1/2 tsp
- Red chilli powder(degi mirch for colour) – 1/2 tbsp
PROCEDURE :
- Heat oil in a Pan/Karahi, put cumin seeds and curry leaves, when they splutter, Put all the vegetables at once, stir and roast them for couple of minutes on high heat
- Reduce the heat to low, cover and let it cook until turns slightly soft



- Now put salt and stir everything again well, cover and let it cook for couple of more minutes

- Meantime, Heat ghee in a tadka pan, put turmeric powder and red chili powder



- Put this tempering as well as sugar/jaggery all over the stir fried veggies



- Combine everything well while stirring, remove from the heat, Sprinkle chopped coriander leaves on the top…. and the stir fry/Palya is ready to serve.
