CARROT CUSTARD PUDDING …sweetened with Jaggery/ಕ್ಯಾರಟ್ ಕಸ್ಟರ್ಡ್ ಪುಡ್ಡಿಂಗ್ …ಬೆಲ್ಲದ ಸಿಹಿಯೊಟ್ಟಿಗೆ

Carrot pudding is a simple, yummy desert which is nutritious too. Very simple to make recipe taken from one of my old written recipe book.
This is a healthy recipe for children and grown ups. I have used raw cane sugar today, but I always put powdered jaggery in this but its completely your choice to use any sugar, as just there will be a slight change in the color of the desert.
It can be served as both hot & cold, just you need to keep it in the refrigerator for 1 hour or so… to serve it chilled

Ingredients : measuring cup used – 250 ml
- Ghee – 2 tsp (I have put this much, you can add as per your requirement)
- Grated carrot – 1 cup (take grater with big holes)
- Powdered jaggery/raw cane sugar – 2 tbsp
- Custard powder – 1 tbsp
- Milk – 1/2 cup + 1 cup
- Raisins – up to 2 tbsp
- Cashew nuts – 2 tbsp
- Pistachios – 2 tbsp
- Slivered almonds – 2 tbsp
PROCEDURE :
- Heat ghee in a pan, add in raisins and nuts, saute for a while, then add in grated carrot, saute till the moisture evaporates ie… for 1 or 2 minutes
- Now add in 1/2 cup of milk, keep the flame to medium, close the lid and allow it to get cooked by stirring in between
- Meanwhile stir custard powder in 1 cup of milk and keep it ready
- Once the carrot is cooked, add in sugar/jaggery and mix well
- Now add in custard powder milk mixture and stir continuously so that it won’t form any lumps, remove from the heat when the mixture turns thick
