Carrot soup – in my own way !! ha ha yes just gathered the vegetables, herbs and spices which I felt, would go well with each other, blended, boiled, strained and finally emptied the cup. An awesome, tasty, nutritious, healthy appetizer !

I thought of adding 1 tbsp of milk powder to the soup, but today I did not add, may be next time I shall try adding

I have prepared saaru/rasam using that left over strained mixture of soup by adding 1/2 cup of cooked toor dal – shall share the recipe soon

Ingredients : measuring cup – 250 ml, servings 2
  • Grated carrot – 1/2 cup tightly packed
  • Grated beetroot – 2 tbsp
  • Tomato – 1/4 cup tightly packed (I have put 1 medium sour(desi) tomato)
  • Coriander leaves – 2 tbsp
  • Curry leaves – 1 string
  • Grated fresh coconut – 1/4 cup loosely packed
  • Ghee /butter- 1 tsp
  • Ginger – 1/2 tbsp tightly packed
  • Black pepper corns – 1/2 tsp
  • Carom seeds/ajwain/om kalu – 1/2 tsp
  • Salt – heaped 1 tsp
  • Sugar (raw cane sugar) – 1 tsp
  • Water – 1&1/2 cup
PROCEDURE :
  • Heat 1/2 tsp Ghee/butter, add in carom seeds, black pepper corns and ginger, stir for a few seconds and remove from the heat
  • Mean while boil 1 cup of water in a vessel
  • Now gather all the other ingredients except sugar in a blender, Put half cup of water and the prepared tempering, blend everything well and pour into the vessel containing boiling water and now add in sugar and let it boil further
  • Remove from the heat and pass it through the strainer (you can retain it as such also), add remaining 1/2 tsp of ghee/butter and serve
