One of my most favorite paratha & Paneer recipe, which I make very often during winters, when methi or fenugreek leaves are available everywhere in plenty

As the heading itself depicts, this is a two in one recipe, using which you can make stuffed paratha or can also be converted into a dry subji by adding paneer to it.

The most important and special mention here is my Methi/Menthya Soppu/Fenugreek Leaves Platter of which you should definitely have a look at least once

Ingredients : measuring cup used 250 ml

  • Fenugreek leaves/methi (chopped) – 2 cups
  • Paneer – 200 gm (I have put this much, you can always adjust)
  • Onion – 1 big
  • Oil – 2 tsp
  • Green chili – 1
  • Salt – to taste
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • Coriander powder – 1 tbsp
  • Cumin powder – 1/2 tsp
  • Garam masala powder – 1 tsp
  • Hing – 1/8 tsp

PROCEDURE :

  • To begin with, wash well and chop methi/fenugreek leaves, onion, green chili and cut the paneer into cubes or rectangular shaped
  • Heat oil in a kadai/pan, put green chili, when it splutter, add onion and saute until it turns slightly soft
  • Now put methi/fenugreek leaves and saute them together until cooked well by adding salt
  • Then put turmeric powder, red chili powder, coriander powder, cumin powder, hing and garam masala powder, stir well until all the moisture evaporates and everything gets mixed nicely
  • Remove from the heat, let it cool completely, then make portions, stuff into the dough and make Parathas (1&1/2 cup of wheat flour yields 6 regular sized parathas)
  • OR
  • You can crumble the Paneer and add to this subji, mix it well
  • Make portions, stuff inside the dough and make Methi Paneer Paratha

OR

  • Add Paneer cubes to that methi onion mixture and combine gently on low heat without breaking the paneer
  • Our yummy methi paneer subji is ready to relish on. You can pair this with any kind of roti
