Raw Mango Ladies Finger or Okra Stir Fry |

An excellent accompaniment to go with Plain paratha, phulka, chapati, poori etc. is this raw mango ladies finger stir fry. Personally this has become one of my most favorite subji lately.

Just except for the time taken to roast the ladies finger, this is an easy and yummy subji recipe. Subji/stir fry translates to Palya in Kannada. I insist you all to try making this subji definitely.

Ingredients : measuring cup – 250 ml

  • Ladies finger/okra/bhindi/bendekayi – 3 to 4 cups
  • Onion – 1 big
  • Mango (grated) – 1/2 cup
  • Oil – 3 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Curry leaves – few
  • Red chili powder (Kashmiri/byadigi) – 2 tsp
  • Turmeric powder – 1/2 tsp
  • Salt – to taste

PROCEDURE :

  • Heat 2 tbsp of oil in a pan/kadai and saute the Okra until soft on medium heat, then transfer to a plate
  • Now in the same pan/kadai heat remaining 1 tbsp of oil, put mustard seeds, cumin seeds and curry leaves, when they splutter put sliced onion and saute until translucent
  • Now add in sauteed okra, turmeric powder, red chili powder, grated mango, salt and stir well while combine everything
  • Serve hot with chapati or phulka or plain paratha or poori and enjoy
