Waday or vada is a famous South Indian deep fried snack. Urad dal wada is crispy, tasty & protein rich food. This is delightful with chutney, Rasam, Sambar. In Karnataka this is the special dish for fifteen days during Paksha masa and this dish is not made on festival days or any kind of small or big functions

There are many varieties are there in this particular recipe like…. it is deep fried and then rinsed in the water and added to the spiced and tempered curd, one more type is it is soaked in lentil saaru/rasam etc.

Ingredients : measuring cup used – 200 ml

  • Urad dal/ Black lentils – 1 1/2 cup
  • Green chillies – 4 to 6
  • Pepper corns – 6 – 8 nos.,
  • Ginger (grated) – 1 tsp
  • chopped fresh coconut – 2 tbsp (optional)
  • Curry leaves – few
  • Salt to taste
  • Enough oil for deep frying

PROCEDURE :

  • Clean, wash & soak the black lentils in enough water for over night ie…. 9 to 10 hours
  • Drain & add green chillies, ginger,pepper corns & salt  & blend it to  a fine paste adding little (2-3 tbsp) water
  • Take out and add chopped fresh coconut and curry leaves & combine well
  • Heat oil, it should be really hot
  • Wet you hands, take a portion of the mixture and make a hole in the centre & drop it in the oil
  • Deep fry the wada till it turns golden brown on both the sides
  • Repeat this with the remaining batter
  • Serve with authentic coconut chutney
