Kootu is a kind of curry or sambar made using many vegetables and freshly ground spices, different from our regular huli Pudi or sambar powder It is an authentic dish from South India.
The spices and their quantity differ form state to state, but everybody uses many vegetables in it for sure. It is being eaten along with rice.
This mixed vegetable Kootu is often made in big functions like marriages, gruhapravesha, Upanayana etc and many temples as well, but at our place this is a must to do curry at least for eight to ten days in a month
Ingredients : measuring cup used – 200 ml
- Mixed vegetables – 1/2 cup each (like french beans, potato, yam, white pumpkin, cabbage, Carrot, green peas, cluster beans, beetroot, bottle gourd etc in any number of combination or only 2 or 3 vegetables)
- Cooked lentil – 1 cup (pigeon peas/arahar dal/togaribele)
- Peanuts – 1/2 cup (adjust)
- Tamarind juice, slightly thick – 1/4 cup
- Rock salt – 2&1/2 tbsp (adjust)
- Water – 3 to 4 cups
For grinding masala :
- Coriander seeds – 2 ½ tbsp.
- Black gram (Urad dal) – 2 tbsp
- Black pepper corns – ½ tbsp.
- Grated dry coconut or fresh coconut – 1/3 cup (or 1/3 cup each)
- Red chilli – Byadigi (for color) – 6, Guntur (hot) – 2
- Cinnamon stick – 1 ½ to 2 inches
- Curry leaves – 10 – 15 leaves
- Asafoetida – ¼ tsp
- Turmeric powder – 1/2 tsp








For tempering :
- Ghee – 2 tbsp
- Mustard seeds – 1 tsp
- Curry leaves – 2 sprigs
PROCEDURE :
- Dry roast everything and powder it
- If you want to store the prepared powder, then use only dry coconut and do not put water while grinding
- You can put both fresh and dry coconut for the immediate use and grind by adding water OR
- You can put either of them and grind with or without water ie in the form of powder or paste
How to make Kootu :
- Wash , cut & cook all the vegetables along with peanuts, I cook the vegetables in an open vessel, you can do depending on your practice
- Now put cooked lentil, tamarind juice, salt and ground paste as well and stir while combining everything well



- Keep stirring in between and let it boil well, then remove from the heat


- Prepare the tempering and pour it on the Kootu


- Enjoy with steamed rice or cooked ragi rice or cooked broken wheat
