Lauki Ka Bharta or Spiced Mashed Bottle Gourd|

Today I’m here to share this delicious Indian curry, bottle gourd bharta or the famous lauki ka bharta recipe, made in my own way. I never make it smoky (as nobody at home likes it that way) rather I prefer making boiled and mashed version
While buying the bottle gourd I always choose the tender ones and use it along with the seeds, which makes this curry fibre rich, full of vitamins, healthy, nutritious and super yummy
This lauki ka bharta or bottle gourd curry can be paired along with any kind of flatbreads, south Indian style rotti, Poori and even with steaming hot rice
Ingredients : measuring cup used – 250 ml
- Bottle Gourd – medium sized (after mashing yielded almost 3 cups)
- Water – 1/2 cup
- Salt – 2 tsp (total)
- Jaggery – 3/4 tbsp
Others :
- Oil/Ghee – 2 tbsp
- Cumin seeds – 1/2 tbsp
- Ginger, grated – 1 tbsp
- Hing – 1/8 tsp
- Black pepper powder – 1/4 tsp
- Green chilli- 1 tsp
- Coriander leaves – 1/3 cup
- Curry leaves – 2 sprig
- Onion – 1&1/2 cups
- Tomato – 1 cup
Spice powders :
- Turmeric powder – 1/2 tsp
- Red chilli powder (colour) – 2 tsp
- Amchur powder – 1 tsp
- Coriander seeds powder – 1 tsp
- Garam masala powder – 1/2 tsp
PROCEDURE :
- First, add 1/2 cup of water and pressure cook the dice bottle gourd until soft (about 1 whistle in my cooker). Let the pressure release then mash the bottle gourd thoroughly. This yielded almost 3 cups of mashed gourd for me.
- Now heat ghee/oil in a pan, put Cumin seeds, ginger, hing, black pepper powder, green chilli and saute everything, now put a part of coriander leaves, curry leaves and stir again
- Put onion, tomato and 1 tsp of sat stir until onion turns translucent, then put all the spice powders and stir for a minute on high heat




- Reduce the heat, put mashed gourd plus 1 more tsp of salt and jaggery. stir to mix everything well, cover and let it cook further. Keep stirring occasionally until all the water evaporates and the mixture turns thick by leaving the edges of the pan




- Then sprinkle remaining coriander leaves and cook further for a minute. Throughout the process, make sure the bharta does not stick to the pan
