I’m so excited to share my very own original recipe with you all – I’m absolutely proud of how this fresh dates dry coconut paratha or dates flatbread turned out!
Now it’s the season of fresh dates, and plenty of both yellow and red ones are available in the market, I decided to make the most of them and try this innovative flatbread recipe today
Unlike chewy, sticky dried dates, fresh dates are crisp, mildly sweet and juicy, offering fewer calories. But dried ones, which contains lower moisture, are not easily perishable compared to fresh dates which contain significantly more moisture and are highly perishable and needs refrigeration
They say, fresh raw dates go through distinct ripening stages, offering a different texture and flavour. They are categorised as Kimri (totally unripe, green), Khalal (yellow/red coloured ripen), Rutab (red/yellow coloured, sweet and ripen), Tamr (fully ripen, dried and wrinkled)
Dates are indeed nutrient dense, rich in fibre and antioxidants but also calorie heavy. So moderate consumption is the key. Therefore in this recipe, I have put a small quantity of dates and to compensate I have put slightly more quantity of dry coconut, as it adds healthy fats and balances the overall glycemic effect
Ingredients : measuring cup used – 250 ml
For the dough :
- Whole wheat flour (I used high bran) – 1&1/2 cups
- Salt – 1/2 tsp
- Water – to knead the dough
For stuffing :
- Crushed fresh dates – 1/2 cup
- Grated dry coconut – 3/4 cup
- Sesame seeds – 1/2 tbsp
- Poppy seeds/Khus khus – 1/2 tbsp
- Cardamom powder – 1/4 tsp
- Black pepper powder – 1/8 tsp
- Salt – a fat pinch
PROCEDURE :
- Mix together wheat flour, salt and form into a soft dough by adding sufficient water little at a time
- Now wash and wipe the dates well, remove the seeds and dry grind first, then put dry coconut, cardamom powder and grind again, transfer to a bowl or parath, put sesame seeds and poppy seeds, salt and pepper powder mix everything well






- Now take a portion of the dough, flatten it a little by dusting with wheat flour, place a portion of the stuffing in the centre, cover from all the sides, seal properly and roll into a slightly thick disc


- Cook the rolled disc on a heated tawa, by smearing little oil or ghee on both the sides


- Serve hot along with any kind of accompaniment.
- Today I paired this fresh dates paratha with Lauki Ka Bharta (again, which is made exactly how we like it)
