Prepared using home made fresh kadai masala powder

Today made this north Indian famous and special accompaniment dish – kadai paneer. Also made the kadai masala at home freshly just before making the subji, So…. I think, no need to say that it turned out super fresh, aromatic, tasty, yummy and delicious as well as delectable.

The quantity of the ingredients which I have mentioned for making the kadai masala powder lasts for 3 batches of below mentioned proportion of the subji ie …approximately we get around 9 tsp’s of ground kadai masala powder.

However I’m comfortable of making this subji in this method by using two different kadai’s or else you can make using only one kadai. In that case you need to add little more water to the chopped onion-tomato mixture after sautéing and then add all the diced vegetables , stir well, lower the heat, cover and let it cook along with the sautéed mixture and water. Then at the end you can add paneer cubes and cook further for a minute.

Ingredients :

  • Oil – 1 tbsp
  • Cumin seeds – 1/2 tbsp
  • Turmeric powder – 1/4 tsp
  • Kashmiri red chili powder – 1&1/2 to 2 tsp
  • Cumin powder – 1 tsp
  • Coriander seeds powder – 1/2 tbsp
  • Paneer – 200 gm (cubed)
  • Capsicum – 1 big (diced)
  • Onion – 1&1/2 big (diced) + other 1/2 finely chopped
  • Tomato – 1 big (diced), 1 big finely chopped
  • Kadai masala powder – 3 tsp
  • Kasuri methi – 1 tsp
  • Sugar (organic) – 1 tsp
  • Salt to taste
  • Water – 2 to 3 tbsp
  • Coriander seeds – 2 tbsp
  • Cumin seeds – 2 tsp
  • Fennel seeds – 1/2 tsp
  • Black pepper corns – 1 tsp
  • Green cardamoms – 2
  • Whole red chilies – 5
Dry roast everything, allow it to cool, then grind into a fine powder

PROCEDURE :

Heat 1/2 tbsp oil, add cumin seeds, finely chopped onion and saute for a minute or two or until the onion turns slightly transparent

Then add finely chopped tomato and saute until they turn soft, in between add little salt

Now add turmeric powder, red chili powder , cumin powder and coriander seeds powder, stir well, add 2 to 3 tbsp of water, mix well, turn the heat to low, cover and let cook for a while

Meanwhile heat the remaining 1/2 tbsp of oil in another kadai, Add diced onion, capsicum and saute for a minute then add in tomato as well and saute well continuously on high heat for a minute or two. The main purpose should be to keep the veggies crunchy and definitely not to make them too soft.

Now add sautéed onion-tomato mixture, kadai masala powder, required salt and stir everything once on medium heat

At last add Paneer, kasuri methi, sugar and mix everything slowly, reduce the heat, cover and let it cook for a minute

Remove from the heat and serve with Phulka, roti, chapati, Plain paratha etc
