Raw Mango Fresh Red Chilli Spicy Rice

I prepared this delicious mavinakayi chitranna during the recent Ugadi festival. I tried the recipe for the first time with a little hesitation (as it was a festival day!!), but the result was irresistible-it was truly that delicious
Now moving forward, I’m going to try this same recipe again, but by replacing fresh picador red chilli with fresh picador green chilli, very soon. And I’m sure of a great result this time too
However, I highly recommend you try this delicious raw mango fresh red chilli spicy rice or Mavinakayi Hasi Kempu Menasinakayi Chitranna and let me have your valuable feedback-which will make my day and inspire me to try more and more such recipes
Ingredients : measuring cup used – 250 ml
- Cooked rice – 3 to 4 cups
- Grated raw mango – 1/2 cup
- Jaggery – 1 tbsp
- Rock salt – 1 heaped tbsp
To grind together :
- Raw mango chunks – 1 cup
- Grated fresh coconut – 1/2 cup
- Curry leaves – a fistful
- Fennel seeds – 1 tsp
- Fresh red chilli – 1 cup
- Black pepper corn – 1 or 2
For tempering :
- Oil – 3 tbsp
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Sesame seeds – 1 tsp
- Sprouted fenugreek seeds – 1 tbsp (optional, or you can put 1/2 tsp fenugreek seeds as well)
- Turmeric powder – 1/2 tsp
- Curry leaves – 2 sprigs
- Hing – 1/4 tsp
- Peanuts – 1/3 cup
PROCEDURE :
- To begin with, grind together all the ingredients listed below the heading ‘to grind together’, without adding water
- Heat oil in a pan, put peanuts and roast them , then put mustard seeds, cumin seeds, sesame seeds, turmeric powder, curry leaves and hing, stir everything


- Now put, ground paste, grated raw mango, jaggery and rock salt, mix and stir everything well until raw smell vanishes and the mixture leaves the edges of the pan


- Remove from the heat, put cooked rice and combine everything well or you can use only the quantity you need immediately and store the rest of the paste once cooled completely

- Allow the mixture to cool completely, then transfer into a clean glass jar and refrigerate it, so that you can use as and when needed
