Whenever we visit Sri Venkateshwara temple, a branch of TTD in New Delhi, we get this chitranna-a rice dish as Prasada. And it is so tasty and simple that I tried it out immediately after our first visit around 13 years back, and since then I have been making this chitranna often

This is very easy and quick dish that can be made with freshly cooked or left out rice, it tastes superb either way. Now let’s look at this very aromatic and simple recipe

Actually, this chitranna looks like a simpler version of Ulundogare (roasted (powdered) black gram rice) it closely resembles that recipe, though I must say it is a much simpler version

Ingredients – measuring cup used – 250 ml

  • Cooked rice – 1&1/2 cups
  • Salt – to taste

For tempering :

  • Ghee – 3/4 to 1 tbsp
  • Split black gram flour/uddina hittu – 1/2 tbsp
  • Cumin seeds – 1 tsp
  • Black pepper powder – 1/8 tsp
  • Hing/asafoetida – 1/8 tsp
  • Curry leaves – few
  • Cashew nuts, broken – 2 tbsp (optional)

PROCEDURE :

  • Heat ghee in a Pan/Karahi, Put uddina hittu (split black gram flour) and roast until aromatic and turns light brown, then immediately add cashew nuts(if adding), cumin seeds, pepper powder, hing, curry leaves, stir once, reduce the heat to low
  • Now put salt and cooked rice and mix everything well. That’s it!! delightfully aromatic chitranna is ready to eat
