Today I’m going to share one of my mom’s special, age-old, traditional recipes made with amaranth leaves or rajgira leaves or dantina soppu or harive soppu, as we call these in Kannada

Amaranth leaves comes in two colors – red and green. And this stir fry can be made using any colour individually or mix of both together

Amaranth leaves pepper stir fry or Soppina hittu menasu (or hit menasu) is very easy and quick-to-make, with very few easily available ingredients, but it tastes the ultimate

Ingredients : measuring cup used – 250 ml

  • Ghee – 1 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – tsp
  • Split black gram/uddina bele – 1/2 tbsp
  • Amaranth leaves or dantu or harive soppu – 6 cups
  • Water – 1/2 cup

To grind together :

  • Black pepper corns – 1 tsp
  • Rice flour – 1 tbsp
  • Grated fresh coconut – 1/2 cup
  • Salt – 1 tsp(heaped), adjust

PROCEDURE :

  • Heat ghee in a pan, Put mustard seeds, cumin seeds, split black gram and let them splutter, then put well cleaned and chopped amaranth leaves or dantina soppu or harive soppu, saute while mixing everything well. Put water, cover and let it cook
  • Meanwhile, dry grind together all the ingredients listed below the heading ‘to grind together’ in a mixie jar

Once the leaves are cooked, put the ground dry powder and stir for couple of minutes while mixing everything well

  • That’s it! delectable traditional soppina hittu menasu or amaranth leaves pepper stir fry is ready. Mix with steaming hot rice and enjoy
